This week I took an ice cream making class at L'Ecole Valrhona in the hippest place in the world...Brooklyn (hint, lots of gigantic beards everywhere). The class was taught by Ice Cream Master Christophe Domange a Chef from the Valrhona Chocolate Company of France. Professional Chefs from around the country and the world took part in this 2 day seminar. 

I have been making my own ice cream as a chef for decades, but I was never taught the science behind it or the variations that can be used to produce different styles.  Here are a fewpictures from the class. Most importantly,  come by and taste the results on our new spring menu.
